The pronunciation and the gloss is the same, so why is the instance I've marked red spelt <el> instead of <eo> like all the other instances?

The mistake is in the second line The correct pronunciation must be /ɛl'zuːnu.iˌnɛs/ so the el- is indeed correct.
However, the prefixes el- and eo- have the same meaning and both refer to 1SG.
The difference is made by the initial consonant of the stem that can cause mutation when the prefix is added.
